Ingredients

  • 1.5 lbs Brussels sprouts, trimmed and halved
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 small red onion, roughly chopped
  • 1/4 cup toasted walnuts, roughly chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved Brussels sprouts with 2 tablespoons of olive oil, maple syrup, smoked paprika, and cayenne pepper.
  3. Add the chopped red onion, minced garlic, and balsamic vinegar to the same bowl. Toss everything together well to coat the sprouts evenly.
  4. Spread the seasoned sprouts in a single layer on a baking sheet.
  5. Roast for 20 to 25 minutes, tossing halfway through, until the sprouts are tender and caramelized.
  6. Remove from the oven and immediately toss with the toasted walnuts before serving.
