Creamy Sesame Peanut Noodles with Crispy Tofu

Ingredients

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tbsp cornstarch
  • 2 tbsp sesame oil
  • 1 large red bell pepper, thinly sliced
  • 1 cup spaghetti or rice noodles
  • 1/2 cup peanut butter (unsweetened)
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp chili garlic sauce (or sriracha)
  • 2 cloves garlic, minced
  • 1/2 cup water or vegetable broth
  • 1 cup chopped scallions for garnish
  • 1/4 cup chopped peanuts for garnish

Instructions

  1. Toss the cubed tofu with cornstarch and 2 tablespoons of sesame oil. Heat a large skillet over medium-high heat and pan-fry the tofu until golden brown and crispy, about 8-10 minutes. Set aside.
  2. While the tofu cooks, prepare the sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, chili garlic sauce, and minced garlic.
  3. Add the water or vegetable broth to the sauce mixture, stirring until smooth.
  4. Cook the spaghetti or rice noodles according to package directions; drain and set aside.
  5. In the same skillet used for the tofu (add a splash more oil if needed), toss the sliced red bell pepper with the cooked noodles for 2 minutes to warm them up.
  6. Pour the peanut sauce mixture over the noodles and vegetables, tossing everything until the noodles are evenly coated.
  7. Gently add the crispy tofu to the noodle mixture. Garnish generously with chopped scallions and chopped peanuts before serving.

  • Pressing the tofu before frying is key to achieving maximum crispiness.
