- Toss the cubed tofu with cornstarch and 2 tablespoons of sesame oil. Heat a large skillet over medium-high heat and pan-fry the tofu until golden brown and crispy, about 8-10 minutes. Set aside.
- While the tofu cooks, prepare the sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, chili garlic sauce, and minced garlic.
- Add the water or vegetable broth to the sauce mixture, stirring until smooth.
- Cook the spaghetti or rice noodles according to package directions; drain and set aside.
- In the same skillet used for the tofu (add a splash more oil if needed), toss the sliced red bell pepper with the cooked noodles for 2 minutes to warm them up.
